Fabio on Fire: Wood-fired pizza and Italian cuisine

Fabio on Fire is an authentic Italian restaurant. This charming restaurant and bakery is home to some of the best wood-fired pizza on the west side. Owner Fabio Ceschetti is from Italy and the recipes he uses are from his grandparents and mother.
The restaurant quickly gained notoriety for its wood-fired pizza and handmade pasta dishes. “People love the pizza; the dough is made with a ‘starter’ that my grandfather made and I brought over from Italy when I opened the restaurant.” Ceschetti said.
When you step inside the restaurant, it is warm and inviting: The oven is the soul of the restaurant. “My pizza is famous because it’s really light and not too hard on your stomach.” said Ceschetti. All the ingredients are imported from Italy.
Guest Andre Licardi, a retired art teacher and artist, who has been to Italy many times, suggested Fabio on Fire as his top pick. He ordered the Charcuterie board and the orecchiette handmade pasta with Italian sausage and broccoli.
He goes on to describe how “terrific” and delicious the pasta was. “You can tell that the pasta is handmade,” he said. “It was like we were eating back in Italy.”
Guest Marlaina Larsen-Thorslev, who works for a non-profit, also dined in at Fabio on Fire and ordered the homemade sacchettini stuffed with ricotta and butternut squash served with sage cream sauce and crispy prosciutto di Parma.
“The pasta was extremely light,” Marlaina said. She goes on to say that “the flavors were incredible.”
Guest Michelle Smith indulged in Fabio on Fire’s margarita pizza which according to her it was the best wood fire pizza she had ever experienced.
One sweet treat that Michelle called “simply stunning” was the tiramisu cake made in-house with real espresso coffee from Italy. “It was light and fluffy.” she said.
All of the guests enjoyed the dining experience and suggested it was a great place.
