Cocina Chiwas: Mexican cuisine with a twist

This family-owned restaurant mixes bold flavors with rich history and culture all while adding a twist on traditional Mexican restaurants and cuisine.
Started by he and his wife, Armando Hernandez said they wanted Cocina Chiwas to combine recipes they enjoyed from their upbringing in Chihuahua, Mexico, with what they have learned and loved from Arizona cuisine.
Hernandez said they wanted to put their own twist on classic Mexican restaurants with a menu that changes frequently, so guests can expect to try something new each time.
Hernandez said they think of their cocktail program the same way they think about food: as showcasing a different side to Mexican culture. He said they aim to show guests the different regionalities in drinks that go beyond the classic tequila and mezcal.
Hernandez said when guests come to try out their delicious dishes and cocktails, their goal is to make guests feel like they are invited to his home.
“A lot of the things that we’re trying to format is to build a restaurant that’s formulated for community,” Hernandez said. “I want you to feel comfortable.”
Guest Steve Semken said he found Cocina Chiwas from their other restaurant, Tacos Chiwas, located in Phoenix and Mesa. To start off his visit, he had the Chile Colorado bean dip that was served along with homemade tortilla chips.
Next up, Semken had the chicharrón and pork belly served on poblano rice with sliced radish, which he said was cooked up perfectly. He said the dish was crispy and had a hint of spice to it.
Semken didn’t forget to add a tasty cocktail to his order. He had the chihuarita, which is a margarita made with sotol, a Chihuahua native liquor, instead of tequila.
For a combination of flavors to finish his visit, he ordered the mango sorbet topped with tajin for dessert. The sorbet was homemade, he said, and was both fresh and fruity.
Semken’s pro-tip: They are great for guests looking for a menu that is gluten-free friendly.
