Michelina’s Stuffed Mushrooms

8 large mushrooms
2 fresh Italian sausage Links
1/2 lb ground veal
1 tablespoon fresh chopped garlic
1 tablespoon fresh chopped parsley
2 tablespoons olive oil
1/2 cup fresh parmasean cheese, grated
Salt and pepper to taste

Wash mushroom and remove stems to remove (save them). Set mushrooms side up in a shallow baking dish. Grind mushroom stems and sauté with 1/2 teaspoon of garlic and 1 teaspoon of oil. In a separate pan sauté meats and cook about 3 minutes, add 1/2 teaspoon of garlic, parsley, salt and pepper.

Mix both pans together and add cheese. Stuff mushrooms. Then drizzle 1 tablespoon olive oil over the top and bake 350 for 15 minutes.
